I just put in an order for the Technivorm coffee brewer from Holland. It is an auto brewer that heats the water to 200 degrees and drips supposedly an excellent cup. It has many manual controls too. Best of both worlds!!

Oh, ok. I thought the filter was normal so it wasn’t worth 80 bucks. But now i see your point….A very good special filter,which is better than normal paper filters, is what makes the funnel-on-flask unit cost 80 bucks. Thats Rreasonable.
I doubt the formaldehyde is in sufficient quantities to cause any trouble. If it were, don’t you think more coffee drinkers would have cancer? A bleached filter has less “papery” flavor than an unbleached filter, and is therefore superior.
The water temperature also matters. That would probably be acceptable with a bunn or a cuisinart, they get the water hot enough, but most automatics don’t. the other thing is that a chemex is about 1/5 the price of a good bunn coffee maker.
There’s no evidence of that anywhere.
You’re right about the unit itself, but the filters are supposed to be what makes the chemex unique. Apparently they filter better than normal paper filters.
The $80 “chemex” coffee maker is just a funnel on a flask….
What a waste . You can make the same thing without the “oh-so awesome” chemex coffee maker.
the most important thing to me about this coffee making technique is the fact u dont have plastic and melamine seeping into your coffee and that stuff can cause cancer and problems in your hormones (very bad for young males) thanks for the videos imma buy one.
I don’t understand why you just cant use that filter paper on an automatic drip coffee maker… is there any special reason?

This is merely a different way to brew coffee that produces a different cup of coffee. I do use a french press and when I brew in the chemex I use unbleached filter papers.
Yeah, I look back on these early videos and realize I did quite a few things wrong. I have much better technique now, as well as better equipment (burr grinder FTW!), and I roast my own beans. This is great advice though and thank you for posting this, it will help others down the road.
This is poor technique. That’s way too much water for a bloom; there should be practically no water dripping through. You must avoid pouring around the sides of the filter and never disturb the bed of coffee. You should also pour much more deliberately and slowly, making an effort in between to maintain a 195°-200°f temperature —a thermometer is your friend. To each his or her own, but if you’d truly like to get everything you can out of this method take more care than this.
Your brewing temp is dropping below the ideal while you’re waiting between pours. This could encourage bitter or “dirty” tasting coffee. Also, you’re getting DIOXIN and FORMALDEHYDE dissolutes through that bleached paper filter. At least use an unbleached filter, or better yet, use a french press or vacuum pot. You’ll have a more uniform brewing temps, and you’ll brew your java more efficiently with better flavor preservation.

One thing that I noticed and thing you actually mentioned it, for this type of coffee method I would like my coffee ground a little bit more fine (just a wee bit) than what you had.
And a suggestion if you would like to move up the geek level you should try the “vaccum pot” that is really geeky

You mean Celsius? And no, they don’t, they tend to use Kelvin.
The thing is coffee goes COLD! and the taste coffee is particulary bitter I find. so I use french press instead. I am wondering you don’t mind cold coffee?? I mean absolutely positively coffee isn’t warm enough to drink. What do you reckon?

my chemex has a handle, makes pouring it a lot less involved, not a fan of the collared ones. It does make a damn good cup of coffee, but a press pot still makes the best cup of joe. For the OP: starbucks sells a really nice stainless 10 cup press pot for $70 that you might wanna check out, it’s got an oblong “scopped” knob on top that is perfect to rest a 10lb. dumbell so you can just walk away and let it press itself.
I alternate between my press pot, chemex, and espresso machine regularly.
